You can win Backgrounds at the end of the level when you complete the Background gauge. When you unlock a new one, you can choose to apply it or not.

You can then change the scenery by clicking on the "Backgrounds" icon in the main menu, then select the the one of your choice, and then confirm your selection so that it appears in the back of every level.
